- 1 box orzo (cooked according to directions)
- 8 asparagus spears (large, blanched and cut into 1/2 in. pieces)
- 1/2 cup cherry tomatoes (halved)
- 3 cucumber (persian or 1 standard, diced, I like mine peeled but it’s optional)
- 1 red bell pepper (diced)
- 1/2 red onion (medium, finely diced)
- 1/2 cup pitted kalamata olives (halved)
- 2 Tbsp. capers
- 1/4 cup crumbled feta
- 2 Tbsp. Italian parsley (chopped)
- 1 lemon
- 1/4 cup Italian dressing (or more, I like to mix italian dressing with balsamic vinaigrette)
