  • 2 whole grain wraps (10-inch)
  • 1 cup baby spinach leaves (or salad greens)
  • 1/2 cup cucumber (chopped)
  • 1/2 cup roasted peppers (sliced)
  • 1/2 cup crumbled goat cheese
  • 1/4 cup kalamata olives (chopped)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh mint leaves (chopped)
