- 1 Tbsp. olive oil
- 1 onion (medium, finely chopped, about 1 cup / 250 ml)
- 3 cloves garlic (minced)
- 1/3 cup dried tomatoes (slivered sun-, see note)
- 12 Kalamata olives (pitted and sliced)
- 1/2 cup artichoke hearts (chopped)
- 1/2 cup spinach (chopped, I use thawed frozen spinach, squeezed dry and chopped)
- 1/4 cup finely chopped fresh parsley (or 1 tablespoon /15 ml dried)
- 1 1/2 tsp. dried oregano
- 1 tsp. dried basil
- 1/4 tsp. freshly ground pepper
- 2 Tbsp. balsamic vinegar
- 1 cup crumbled feta cheese
