  • 28 ounces tilapia fillets (I like Regal Springs tilapia found at Costco, Whole Foods, Trader Joes, Marsh Food stores and Jewel grocery stores.)
  • 1 cup grape tomatoes
  • 1 cup olives (– any kind you like – greek, black, green, etc.)
  • 1/4 cup capers
  • 3 cloves crushed garlic (or like 20, whatever you like!)
  • 1 tablespoon olive oil

    This worked very well. I added wine when I cooked the tomatoes etc, used a mix of green and black olives, served it on bucatini with a bit of butter and Parmesan, and topped it with some preserved artichokes. Very well received.

    This was perfection. I marinated the tilapia in butter, garlic and parsley first then fried with a mix of fresh & tinned toms and dark olives. Then, I threw in some vaccuum packed mussels in tom sauce over the top for the last five mins. Served with crusty bread. Also had a cucumber and basil gazpacho to start - the whole 2 courses could be done in 30 mins including prep yet seems so fancy! Defo a staple from now on.

    Delish! Used can of diced tomatoes vs fresh, added turmeric and dill, too. I would season fish next time but still very tasty!

    Amazing! Had to sub a few things - tomato sauce for tomatoes (had none on hand), added some onion, & added some mini peppers sliced cause I don’t like capers. Turned out amazing.

    I didn't have enough cherry or grape tomatoes. so I used a can of seasoned diced tomatoes Still tasty :}
