- 1/2 Tbsp. Star Grapeseed Oil (divided)
- 1 yellow onion (diced)
- 3 garlic cloves (minced)
- 1 lb. 99% fat free ground turkey (Extra Lean)
- 2 sprigs fresh thyme leaves (don't add the entire sprig - just the leaves)

- salt and fresh ground pepper , to taste
- 14.5 oz. diced tomatoes (with Basil, Garlic & Oregano, undrained.)
- 5 oz. kale leaves (baby)
- 3/4 cup crumbled feta
- 3/4 cup part-skim mozzarella cheese (Shredded Low Moisture)
- fresh parsley (chopped, for garnish, optional)

It turned out great and delicious. It may look at first like there's too much onion and too much kale, but believe me it's not. I did 4 things differently. I used olive oil instead of grapeseed oil . I used fire roasted tomatoes and added dried oregano and basil. I added Cayenne. And cooked my squash 10 minutes longer. The dish required a good deal of salt.

It was good not great. Used olive oil instead of grapeseed oil, dried thyme instead of fresh, shallot instead of garlic, 93%turkey instead of 99%, and 5 cups of kale cuz I really love kale. Otherwise all ingredients were the same. Also baked the spaghetti squash in the oven instead of microwave because I had time. The flavor was ok, especially when you got a hunk of feta but otherwise I felt like I had to add a lot of salt. The fiance liked it though and if you want a full stomach, you can make this 4 servings (2 per boat) and only pack on 450 calories, not to mention a ton of protein.
