For Veganuary I was looking for sandwich ideas and this fit the bill as an alternative to chicken salad or tuna as a filling. I didn’t have fresh basil so I used a jarred pesto instead and that worked just fine and replaced the EVOO too. I will definitely make this again. Thanks for this wonderful recipe.
