These Mediterranean salmon burgers are slathered in a creamy lemon-dill sauce, and topped with cool cucumbers, tomatoes and red onions!

- 10 oz. boneless salmon (skinless)
- sea salt
- black pepper
- 2 tsp. olive oil
- 1 1/2 Tbsp. finely minced shallot (about 1 small shallot)
- 1 1/2 tsp. fresh dill (chopped)
- 1 tsp. lemon zest
- 2 tsp. lemon juice
- 1/2 tsp. granulated garlic
- 1/4 tsp. paprika
- 1/8 tsp. ground cumin
- 1/8 tsp. cayenne pepper
- 1/4 cup panko breadcrumbs (or regular breadcrumbs)
- avocado oil (or ghee, for cooking salmon patties)
- 2 burger buns (toasted)
- 1 cup arugula (for topping)
- sliced tomato (for topping)
- red onion (Sliced, for topping)
- Persian cucumber (Sliced, for topping)
- crumbled feta cheese (for topping)
- 1/4 cup Greek yogurt (2% or 5% fat)
- 1/4 cup mayonnaise
- 2 Tbsp. crumbled feta cheese (finely)
- 2 tsp. dill (fresh chopped)
- 1 clove garlic (pressed through garlic press)
- 1/2 tsp. lemon zest
- 1 tsp. lemon juice
