- 1/4 cup diced red onion
- 1/4 cup Italian parsley (minced fresh)
- 2 Tbsp. fresh chives
- cilantro
- gorgonzola crumbles (for topping)
- Kalamata olives (as many as you like)
- buttercrunch lettuce (or Bibb, washed and patted dry for salad bowls)
