  • 12 ounces new potatoes (scrubbed and halved)
  • 3 1/2 ounces green beans (trimmed)
  • 3 medium eggs (hard boiled and shelled)
  • 3 1/2 ounces black olives (drained)
  • 3 1/2 ounces salami (cut into strips)
  • 1 bunch spring onions (trimmed and chopped)
  • chives (finely chopped, to taste)
  • dressing
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • flat leaf parsley (to garnish)

    Directions

    1. Cook potatoes in boiling salted water for 20 minutes. Add beans for final 3-4 minutes; drain.
    2. Cut eggs into wedges. Toss with all the salad ingredients. Mix together dressing ingredients and season to taste. Drizzle salad with dressing, garnish with parsley and serve.
