I stumbled over this dish and realized this is what I always cook if I am not in the mood for fancy new stuff. It is a regular winner.

Really delicious and the kids enjoyed it. I subbed mushrooms in for the aubergine, as no one likes it in this house, and halved the feta as we had crumbles instead of the block. I am craving for more! It is that satisfying!
