- 12 oz. pasta (high fiber macaroni, I used Barilla Plus Farfalle)
- 1 Tbsp. extra-virgin olive oil
- 1 garlic clove (minced)
- 1/2 tsp. basil (chopped)
- 1/2 tsp. fresh rosemary ( finely chopped)
- 1/2 tsp. dried oregano
- 1 lb. boneless skinless chicken breast (cut into bit sized pieces)
- 1/2 cup artichoke hearts (chopped canned, packed in brine without oil)
- 2 oz. sun dried tomatoes (dry packaged & julienne cut, I used California Sun Dry brand but have also used Bella Sun Luci)
- 12 calamata olives (pitted and sliced)
- 1 Tbsp. fresh basil ( chopped)
- 2 Tbsp. light butter
- 2 Tbsp. flour
- 1 1/2 cups skim milk
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 4 oz. crumbled feta cheese
- 2 Tbsp. hummus ( garlic)
