- 2 peppers (mild, cubanelles, banana, anaheim, etc., ribs and seeds removed and diced.)
- 1 jar artichoke hearts (or can, appx. 12-14 oz., in water, drained, rinsed and chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 cup balsamic vinegar

- 1/3 cup fresh basil (chopped)

Delish! It took me about 45 minutes to prepare and is slightly more complex than other pasta salads out there but I'd go for it!
