- 1 lb. pasta (tricolor)
- 1/4 cup balsamic vinegar
- 2 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper (freshly)
- 1/2 cup extra-virgin olive oil
- 1/3 cup sun-dried tomatoes (diced, I like the sun-dried tomatoes that are jarred and packed in oil the best)
- 14.5 oz. artichoke hearts (drained and diced)
- 1/4 cup fresh basil (torn into small pieces, or 1 tablespoon dried)
- 2 tsp. fresh oregano (chopped, or 1/2 teaspoon dried)
- 1/4 cup diced red onion
- 3/4 cup kalamata olives (or black, sliced)
- 2 tsp. spice (saute, equal parts black pepper, salt and garlic powder – I mix up a bunch of this and keep it in a small tupperware in my spice cabinet)
- 4 oz. feta cheese (crumbled)
- 1/2 cup grated Parmesan cheese (freshly)

A nice change-up from plainer, more traditional picnic pasta salad. Very complementary flavors - none overpowering.

Turned out great! Super easy to make and was delicious. I'm not a fan of tomatos so I omited those. Was a bit too salty, I think, but thats an easy fix and I'll play around with it. This is definitely a new favorite.

Everybody loved! It seemed extra gourmet w/the artichoke hearts, sun dried tomatoes & kalamata olives. I substituted whole milk mini mozzarella balls for the feta cheese. Great side dish for a summer meal. Good leftovers too!

One of my favorites! Especially in the warmer months! Perfect for backyard BBQ! I added the marinade from the artichokes (too good to waste!) and added some chopped green onions. I’m not a as big fan of feta cheese so I added fresh mozzarella balls. Delish!

It turned out great! But next time I’ll skip the grated parm, wasn’t into the texture. Otherwise the whole family loved it!

turned out great, only thing that i did different is add pepperoni and add the feta to each serving.

Amazing! super easy to make. I added a little more dijon to the dressing and it was perfect! I definitely recommend you try this.

Made a double batch for a party. I also added 1 shaved fennel bulb which gave it a bit more crunch. The salad was dry so I mixed in an additional mustard/olive oil and vinegar sauce. The leftovers were fought over.

It's the only pasta salad my fiancé will eat. He constantly asks me to make this for him. A nice change from mayo based pasta salads.
