  • 12 ounces dry pasta (I used farfalle)
  • 1 cucumber (English, hot house, diced)
  • 1 pint cherry tomatoes (halved)
  • 2/3 cup sliced kalamata olives
  • 4 ounces crumbled feta cheese
  • 1/2 red onion (a medium, peeled and thinly sliced)
  • vinaigrette (lemon-herb, see below)
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice (freshly-squeezed)
  • 2 teaspoons dried oregano (minced)
  • 1 teaspoon honey (or your desired sweetener)
  • 2 garlic cloves (small, minced)
  • 1/4 teaspoon cracked black pepper (freshly-)
  • 1/4 teaspoon salt
  • 1 pinch crushed red pepper flakes

    love’s fresh i usually like the pesto which is very similar to throw but this is much lighter

    This turned out really well. The vinaigrette is exactly the correct amount. I used the grape tomatoes instead of cherry but other than that, I stuck to the recipe.
