  • 2 tablespoons olive oil
  • 1 pepper (seeded and chopped red, yellow or orange)
  • 1/2 cup olives (pitted and chopped, I use black olives)
  • 1 1/2 cups cherry tomatoes (halved, or 1 large tomato, chopped)
  • 3 green onions (chopped into 1 inch pieces)
  • 1/2 lemon
  • 3 garlic cloves (minced)
  • 1/4 teaspoon salt
  • 1 pinch chili flakes (I use 1/4-1/2 tsp)
  • 4 cups fresh baby spinach (roughly chopped)
  • 1/4 cup basil (chopped)
  • 1/4 cup Parmesan cheese (or more for garnish- optional)
