- 12 garlic cloves (minced)
- 28 oz. diced tomatoes (canned, or 5 medium tomatoes, diced)
- 16 oz. canned chickpeas (drained and rinsed, or 2 cups fully cooked chickpeas)
- black pepper
- 3/4 tsp. sweet paprika
- 3/4 tsp. ground coriander
- 1/2 tsp. cumin
- 10 fresh mint leaves (chopped)
- 1 lemon
- toasted pine nuts (I used more than 1/2 cup, optional)
