Mediterranean Meatball Sandwiches



  • 1 1/2 pounds ground beef
  • 1 1/2 cups breadcrumbs (fresh white)
  • 1 large egg (lightly beaten)
  • 1 clove garlic (peeled and minced)
  • 1 tablespoon basil (fresh chopped)
  • 1 lemon

  • 4 spring onions (cut into 1/2-inch lengths)

  • 4 breads (flat, warmed)
  • lettuce (shredded)
  • cherry tomatoes (halved)

    1. Combine the beef, breadcrumbs, egg, garlic, basil, zest and juice in a bowl and mix thoroughly. Season with salt and freshly ground black pepper. With wet hands, shape mixture into 18 meatballs.
    2. Preheat the broiler to high. Line a baking sheet with foil and spray with cooking spray.
    3. Thread the spring onions and meatballs alternately onto four metal skewers. Season with pepper and brush with the olive oil. Place on prepared tray and cook under broiler for 10–15 mins turning occasionally, until cooked through.
    4. Serve the skewers on flat breads with shredded lettuce and halved cherry tomatoes. Serve with lemon wedges and tzatziki.
