- 1 head cauliflower (to make ~ 4 cups cauliflower “rice”, 480 g / 1.1 lb / 16.9 oz)
- 4 chicken breasts (medium, skinless and boneless, 600 g / 1.3 lb / 21.2 oz)
- 1/4 cup heavy whipping cream (or coconut milk – I like Aroy-D, 60 ml / 2 fl oz)
- 1/2 cup pesto sauce (you can try my Paleo Avocado Pesto, dairy-free or Red Pesto, includes dairy, 125g / 4.4 oz)
- 2 cloves garlic (mashed)
- 1/4 lemon (organic, ~ ½ tbsp)
- 2 Tbsp. basil (freshly chopped –, oregano and thyme, use 1-2 tsp if dried)
- 2 Tbsp. ghee (butter or coconut oil)
- ground black pepper (pinch freshly)
- 1/2 tsp. sea salt (or pink Himalayan, or more to taste)
- 1 cup grated Parmesan cheese (60 g / 2.1 oz, optional)

It was ok, I made it without neutral cream so it was a bit more sour.. and didn’t have fresh herbs..and put less pesto because the one from store is stronger then I prefer..
