- 1/2 red bell pepper
- 1/2 green bell pepper
- 3 Tbsp. red onions (sliced)
- 1/2 cup Kalamata olives (seedless, I slice them in half because of choking hazard with my toddler. Otherwise, you don't need to cut them.)
- 5 Tbsp. olive oil
- 3 Tbsp. red wine vinegar
- 1 tsp. salt (add salt to taste, so adjust accordingly)
- 3 Tbsp. chopped parsley (freshly)
