    Super easy. I love the crunchy fresh sensation in my mouth. A sprinkling of sunflower seeds another dimension of flavor and crunch. Next time will try with avocado on a bed of greens.

    Very good. I made a dressing of vanilla and fig balsamic, olive oil and a splash of lemon juice. Added a pinch of ground red pepper.

    Divine! Yes I would make it again, I modified it by changing the yellow pepper for a red one. Totally loved how crunchy it is and the lemon juice was a nice touch.

    I copied Grandma Debbie's idea of adding onion and garlic. I didn't have onion at home so I used scallion which is very similar in taste. This tasted way better than I would have expected for something so healthy.

    I added a bit more lemon juice and put 2 garlic cloves in the lemon juice for 15 min. Terrific, quick and healthy side. If you add garbanzos, it's a complete meal.

    I love this salad, I add sweet onion and garlic just to give it a kick. It's a full meal on a hot summer afternoon or evening. Better the next day but never seems to last very long. If you're into the mint thing, that does well in here too. Enjoy!
