- 1 cup marinated artichoke hearts (bottled, drained and quartered)
- 1/2 cup pitted Greek olives (halved)
- 1/2 cup sun dried tomatoes (sliced)
- 2 cups grape tomatoes (sliced, a mix of red and yellow would be pretty)
- 1 Tbsp. extra-virgin olive oil
- 3 Tbsp. fresh lemon juice
- 1/2 tsp. coarse salt (or to taste, use sparingly as olives and feta add saltiness)
- freshly ground pepper (to taste)
- 3 Tbsp. Italian parsley (chopped fresh)
- 3 Tbsp. fresh oregano (chopped)
- 3 Tbsp. chopped fresh mint
- 1/3 cup toasted pine nuts
- 1/3 cup pistachios (toasted)

So good! I have made it several times. I use some oil from the sun dried tomatoes for flavor and once substituted raw slivered almonds for the other nuts because that’s all I had in my pantry.
