I cut the breast in half and added some more spices also added couscous with a Mediterranean spice and some naan bread we all liked it

The chicken itself didn’t absorb much of the flavor but the ‘sauce’ was very flavorful. I enjoyed it but the rest of the family didn’t care for the capers.

Simple and delicious weeknight meal.

Read previous comments and incorporated many such as cutting the breasts in half lengthwise, wine to deglaze, adding kalamata olives, lemon zest, extra fresh herbs, etc. it turned out spectacular. We added quinoa as someone suggested but the family said couscous would be better next time.

I deglazed the pan with white wine to create a sauce. I also added spinach and used chicken thighs instead of breasts. It turned out great! It’s definitely an oily dish but that’s part of the Mediterranean diet Note: bone in chicken thighs take longer to cook so keep that in mind. Add spinach at the last minute so it doesn’t turn too dark.

Too much oil. Not making this again grossed me out

This has become one of our go to week night meals- it’s that easy and delicious! I like to add more flavor by seasoning my chicken more heavily with thyme, oregano, rosemary, garlic and a bit of red pepper flakes which also creates a nice browning and flavor for the sauce (I skip the flour to make it GF). I also add lemon zest which really kicks up the flavor!

Beautiful, delicious, simple ingredients. I made it exactly as directed, with the oil from the tomatoes. Perfect flavors husband and company loved it.

I really like the flavor in this recipe. I made this once per the recipe with one small modification and loved it. And once with more modification. I’ve served this with steamed spinach dressed with balsamic vinegar and with roasted green beans. Both great sides. 1. I added chicken broth to the pan at the last step instead of more oil. Healthier and makes a nice sauce. So when I put the chicken back in the pan with the veggies, I added about an inch of broth. Covered and cooked. Sauce was perfect with no extra steps needed. 2. The second time I made it I didn’t have artichoke . I added a can of white beans and some cherry tomatoes instead. Delicious.

Great and easy recipe. Needed about 5 min more added to all times, perfect when a little charred.

This recipe for Mediterranean Chicken w/Sun-dried Tomatoes, Artichokes and Capers was quite delicious. The only change I would make is to add spinach or kale and white wine. I would also use thin sliced chicken breasts, a bit less than 1 1/2 #.

Excellent recipe, easy for a week night! I left out the capers as well, and took the suggestion of pouring in the olive oil that was in the artichoke heart jar as well as some from the sun dried tomato jar.

Absolutely delicious. Like another reviewer said, I would prefer Kalamata olives over the capers. I only used 3 oz of sundried tomatoes, which seemed plenty to me and I sautéed the chicken in the sundried tomato herbed oil. I also decided to pour some of the marinated artichoke liquid into the pan to simmer along with some corn starch and cold water to thicken up the sauce to serve over orzo. Definitely on my list to make again.

Easy and delicious! Loved the Tangy taste of the capers along with artichokes. I used smoked sun-dried tomatoes which gave it even more distinct flavor.
