Didn’t have fennel or lemon and hate kalamata olives, so I used a big red onion and a can of quartered artichokes and a can of regular black olives. Spooned bottled lemon juice over the fish before putting on the spiced breadcrumbs. I used za’atar spice mix (sumac, sesame, salt, sesame) from a Christmas fair trade sale at church and it was really good! Even my picky daughter liked the trout!
