- 2 inches ginger (piece of, peeled and cut into matchsticks)
- 1 inch turmeric (piece of, peeled and sliced into thin rounds)
- 3 stalks celery (sliced thinly on a bias)
- 2 carrots (peeled and sliced)
- 1 piece lemongrass (bruised by smashing with the butt of a kitchen knife)
- 2 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 3 Tbsp. fresh oregano (chopped, or 1 tbsp of dried oregano)
- 1 gal. cold water
- 4 lb. chicken (cut in serving pieces, 8 or 1 whole, cut-up chicken, giblets discarded)

- 2 tsp. freshly ground black pepper

Wonderful. I kept everything the same but reduced the water by about 25%, because that’s what fit into the pot. You need a really large pot to fit everything. I only have a large pot.

The lemongrass, ginger and fresh herbs developed the most flavorful flavor soup. I substituted vegetable broth for water and boneless, skinless chicken vs. a whole chicken. I absolutely loved it and will definitely make it again, it was fabulous.
