The meat didn't loaf or rise; however, it was delicious. The minor changes I made to the recipe were adding 2 TBSP Worcestershire sauce to the meat mixture and I substituted 1 TBSP of minced Hatch green chilies for the green pepper. The sauce is great. I also used alder wood in a smoking box, that imparted a sweet flavor throughout the meat.
