    I LOVE these. I use the instant mashed potatoes Idahoan bacon. I also freeze them and they are still delicious

    Delicious! The muffin size is a perfect serving too. I forgot carrots so I added green bell pepper. Will definitely be making this again :)

    In my house, meatloaf ain't meat loaf unless it has chopped red and green bell pepper. I substituted the ketchup with tomato sauce in the mix but did ketchup atop; added some Worcestershire and horse radish. Saved some time and used instant mashed and they turned out just fine.

    I grated the onions on a cheese grater instead of chopping, I cooked the mealoaf for 5 minutes longer than it said, and added about 2 oz of cream cheese to ensure it would be stiff enough to "ice my cakes" and it was great. This recipe will definitely be added to the rotation.
