- kosher salt (to taste, the cheeses are very salty so use caution and taste before seasoning)
- 1 lb. penne rigate (You can use whatever type of pasta you like. I chose this type of pasta because the noodles hold so much cheese. The cheese can fill the inner tube and it also can ride into your mouth on the other ridges of the noodle)
- 4 cups whole milk
- 8 Tbsp. unsalted butter
- 1/2 cup all purpose flour
- 12 oz. gruyère cheese (grated, Emmi)
- 8 oz. extra sharp cheddar cheese (grated, Cabot)
- 6 oz. blue cheese (crumbled, St. Agur)
- 1/2 tsp. ground black pepper (freshly)
- 1/2 tsp. grated nutmeg (freshly)
- 5 slices white sandwich bread
- 2 hotdog buns
- 1/4 cup fresh basil leaves (chopped, I did not have enough and I wish I had purchased some)
