- 1/2 leek (pale part, roughly cut, or 2 spring onions)
- 1 bunch fresh parsley (about 10 g)
- 1/4 bunch fresh mint leaves (optional)
- 5 sprigs fresh thyme leaves (only, 1 tablespoon thyme leaves)
- 1 clove garlic
- 1 lime zest
- 1 tsp. sea salt (or to taste)
- 1/2 tsp. black pepper
- 1 tsp. coconut oil (butter or ghee)
- 2 Tbsp. olive oil
- 1/2 leek (green and pale part)
- 1 lemon (5 peels of the skin)
- 1 large carrot (peeled and diced into halves)
- 1 potato (large white, or 1 parsnip, peeled and diced into small cubes)
- 3 cloves garlic (sliced)
- 1 tsp. cumin seeds (or ground up cumin powder)
- 2 star anise
- 3 cups chicken stock (750 ml, or bone broth)
- 1 1/2 Tbsp. fish sauce
- 12 kale leaves (torn off the stem and into smaller pieces)
- 1/2 lime juice
- 1/2 lemon (small, about 2 tablespoons)
- sea salt
- freshly ground black pepper (to taste)
- 600 grams turkey (mince, chicken or pork mince can be used in this recipe)
