- 1/2 cup soft bread crumbs (fresh, I use leftover challah and whirr it up in my food processor)
- 3 Tbsp. cold water
- 2 whole eggs (whisked)
- 1/4 cup chopped mint (fresh, or 1 tablespoon dried)
- 1/4 cup chopped parsley (fresh)
- 1/4 cup chopped cilantro (fresh)
- 2 Tbsp. dill (fresh chopped, or 2 teaspoons dried)
- 2 Tbsp. savory (fresh chopped, or fresh oregano or 2 teaspoons)
- 1/4 cup scallions (chopped)
- salt
- freshly ground black pepper
- extra-virgin olive oil (such as Colavita)
- 1 red onion (large, thinly sliced)
- 1 fennel bulb (sliced)
- extra-virgin olive oil
- 2 medium carrots (sliced)
- 5 garlic cloves (minced)
- 1/2 cup raisins (I love golden raisins for their color and complex flavor)
- 1 cup cooked chickpeas
- 15 oz. tomatoes (whole, broken up with your hands)
- 1 cup chicken broth
- 3 tsp. ground coriander
- 1 tsp. ground cumin
- 2 tsp. ground cinnamon
- 1 pinch crushed red pepper (optional)
- 1/2 tsp. saffron threads
- kosher salt
- freshly ground black pepper
- fresh mint (optional)
