- 2 zucchini (large, or yellow squash, about 12 inches long)
- olive oil (2 tsp. + 2 tsp., may need more, depending on your pan)
- 1/2 cup finely chopped onion
- 1 green pepper (finely chopped)
- 2 Tbsp. garlic (finely minced fresh)
- ground beef (1 lb., 10% fat or less)
- ground turkey (12 oz., 10% fat or less)
- anis (use, combination of ground meat you'd like, but use low-fat ground meat for the south beach diet)
- seasoning (1-2 tsp. Spike, optional but recommended)
- 2 flavoring (c, tomato-basil pasta sauce)
- 2 cups low fat mozzarella (or other mild white cheese, I used low-fat blend of six cheeses called Italian blend.)

Excellent idea. Thank yo. Made our own meat sauce after we bought some zucchini at the italian market near us. The boyfriend was very happy. 😊👍

We loved this Recipe, however I did make a few changes and additions, I used mild Italian sausage instead of ground beef, I used a combination of Mozzarella and Romano cheese in the stuffing. I then added some leftover cooked rice to give it some body I didn't have the Spike seasoning so I used a few other herbs that I had on hand. I topped the pieces off with Parmesan. The cooking times stated in the recipe worked out perfectly.

love it but don't know what is spike is that a spice to add. Please forgive me I am a
old lady with bad eyes, went to read it over again and it was spices that you add in .
So that's why my food did not have a kick to it. But it was still good to me....
