- 2 Tbsp. unsalted butter (or olive oil)
- 1 cup finely chopped onion
- 2 stalks celery (finely chopped)
- 2 cloves garlic (minced)
- 1 3/4 lb. ground pork (OR an equal MIXTURE of ground pork and ground beef in any proportion)
- 1 1/2 cups beef stock
- 1 baking potato (large, peeled and cut into 1/4" dice)
- 1 cup carrots (in 1/4" dice)
- 1/2 tsp. salt (plus more to taste)
- 1/2 tsp. thyme
- 1/2 tsp. paprika (smoked or regular)
- 1/4 tsp. canela
- 1/4 tsp. ground cloves
- 1/4 tsp. black pepper
- 1/4 cup bottled chili sauce (I like Heinz)
- 1 1/2 tsp. worcestershire sauce
- 1 tsp. Dijon mustard
- 1 yolk (beaten with 2 tablespoons milk)
