I notice that meatloaf recipes have no body and I feel like I'm eating just a big blob of hamburger. In all three of these meatloaf recipes, I would add one chopped up green bell pepper. It gives it an extra boost that makes this dish more flavorful. If you like mushrooms, sauteed first or from the can, you can add those also. I also add about one tbsp. or more of grated parmesan/asiago/romano, in the can (You can buy this at Target).
