LOVED this. I used this as a meal prep for when I worked 4 12hr shifts in a row and it was satisfying each day and kept me full for a while. Will definitely make again!

I added coriander powder instead of cumin powder, it cans out well. The kids enjoyed too.

So good! I love how the spices bring such a great flavor out of the tofu and peppers. I would recommend prepping the spices beforehand. Saves a ton of time.

This was a great meal to make for meal prepping for the week. I doubled the recipe and it made 6 meals. Easy to make. I had to bake in two batches because there were so many veggies and so much tofu. Would make again!

Very good and healthy! I added more salt and chipotle seasoning and don’t forget to pack the lime ;)

it inspired me to create recipes with little twist, my fiance doesn't like tofu... unfortunately. I used oyster mushroom clusters for him and... couscous as he loves it... outcome!

It was fine, but it needed more salt. The quinoa should be made with broth. Half an onion and only one bell pepper would have sufficed. Used a lot of dishes.
