- 1/2 red onion (small diced)
- 1 red bell pepper (small diced)
- 2 Persian cucumbers
- 2 Persian cucumbers
- 1/2 English cucumber
- 1 can chickpeas (garbanzo beans, rinsed and drained)
- 1 jar artichokes (marinated, chopped, tough leaves removed)
- 1 can black olives (or whatever kind of olives you like)
- 4 oz. salami (Italian, diced, I used sliced Genoa salami)
- 1/2 lb. roasted turkey (large diced, I used deli turkey)
- 1/2 cup dried cranberries
- 1/2 cup sunflower seeds (roasted, salted)
