It was my first attempt at making mayonnaise and I used apple cider vinegar with normal mustard as that were the available stuff in my kitchen. I used virgin coconut oil and lessened the amount to 180ml instead. I think I put a little too much mustard and ended up using a third egg (yolk) into the mix. I figured I like the taste better with 1.5 tsp of palm sugar whisked into the mayonnaise. The result is so yummy that I wouldn't go back to any store bought mayonnaise again! Thank you!
