- 1/4 tsp. dried dill (optional)
- 1 Tbsp. coconut (or other oil)
- 1 1/2 cups yellow onion (thinly sliced)
- 1 cup celery (sliced, 1/4 inch slices)
- 4 garlic cloves (pressed or minced)
- 7 cups vegetable stock (or water)
- 1 1/4 cups sliced carrot (1/2 inch slices)
- 1 cup sliced mushrooms (try cremini or button)
- 2 tsp. sea salt (or to taste)
- 1/2 tsp. ground black pepper
- 1 1/2 Tbsp. fresh dill (minced)
