Took a whole lot longer to cook than the recipe suggests. Was quite tasty in the end but I would add more massaman paste than recommended and more coconut milk.

The flavor of this curry was completely spot on! I would give it 5 stars for flavor, however, I actually prepared the dish twice in the same night. The first time, I followed the recipe EXACTLY as stated, but adding ALL the veggies at the same time was a mistake. After simmering for 10 min, the potatoes were still completely raw, and the carrots were nearly raw. I had to cook it MUCH longer to get the potatoes even “fork tender”, and at that point, the zucchini was nearly “dead”. For the second batch, I parboiled the potatoes for a few min before adding them with the other veggies. It still took longer than 10 min, but the zucchini was better. Next time I will add the zucchini a bit later, but 10 min on the cook time is very inaccurate. Again, the flavor was perfect, but with no salt added, you definitely need the cashews on top. If you aren’t adding cashews, it definitely need a touch of salt if your dietary preferences allow.
