  • 1.25 centimeters galangal (piece of, roughly chopped, optional)
  • 1 stalk lemongrass (tough outer leaves removed, white and light green parts only, roughly chopped)

  • 3 tablespoons tamarind concentrate (*see note below)
  • 1 tablespoon palm sugar (or brown sugar)

    Not bad but not amazing. Indeed a different taste to normal Thai curry, so nice for a change. I followed recipe (roasted spices etc) and added galangal powder, but used a lot more veggies 400 g mushrooms, 2 peppers and 200 g beans, 500 g potatoes, no sugar and used coconutdrink as it has way less saturated fat than coconut milk and less calories. Added johannesbroodpitmeel to thicken later. After all those additions ut was enough for 4 or 5 servings. Served it with scallions pancakes. I think the paste was nice, so probably more flavour if less coconut milk is added. Also added more chili flakes at the end for extra oemph.
