- 1/3 cup boiling water
- 2 lb. beef chuck steak (or roast, cubed remove any large chunks of fat)
- 14 oz. coconut milk
- 3/4 cup beef broth
- 2 star anise
- 2 Tbsp. palm sugar (coarsely grated)
- 1 Tbsp. fish sauce
- 4 russet potatoes (medium sized, peeled & cut into chunks)
- jasmine rice (steamed, to serve)
- dry roasted peanuts (chopped, to serve)
- 1/4 cup unsalted peanuts (dry roasted)
- 2 shallots (peeled & chopped, 1/4 cup)
- 4 garlic cloves (peeled)
- 2 Thai chilies (small red)
- 2 inches galangal (piece of, or ginger, peeled & roughly chopped)
- 1 stalk lemongrass (tender white & green part only)
- 1 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/4 tsp. ground cardamom
- 1/4 tsp. ground cinnamon
- 3 Tbsp. fish sauce
- 3 Tbsp. palm sugar (coarsely grated)
- 1/4 cup coconut milk
