I made this with a few changes. I pan toasted pecans instead. I added chopped apple in addition to the cranberries. I made my own vinaigrette with olive oil, orange juice, cumin, and cinnamon.

Made a few changes. After massaging the lettuce added a bit of lemon juice and massaged it another minute. Added bacon bits, dried cherries, fresh blueberries and goat cheese. Finally made balsamic dressing to top. Fan favorite with a picky family.

Loved this dish! I always found Kale super tough, though tastier than spinach. This was so much easier to chew! Love the sweet and salty additions to this recipe. I don't use Vegan mayonnaise, but used Lime juice (i'm sure lemon would be amazing, but I used what I had on hand ^^) whisked with Dijon Mustard to create a light, tasty dressing! Love how versatile the recipe is, too!
