- 2 cups dhal (Masoor, soaked for 4 hours)
- 1 onion (medium size, finely chopped)
- 1 Tbsp. dried red chili (pieces, or to taste)
- 1 tsp. red chili powder (or to taste)
- 30 curry leaves (torn into pieces)
- 4 green chilies (Serranos chopped finely)
- 3 garlic cloves (grated, optional)
- 1 inch ginger (grated, optional)
- salt (to taste)
- 2 Tbsp. chickpea flour (besan to help form the vadai.)

Easy and tasty! Also works to bbq these, and I would recommend adding a bit of chutney (mango) or pickled lime to the batter for more flavour. The pre-baking sets them well (I use the regular oven, not the microwave).
