I bought a massive sized sweet potato at Farmer's Market and thought this recipe would be a great way to use it. I used an extra clove of garlic and omitted the salt so that I could share with 3 parrots. Three bird butts up in the air (because their heads are down in the bowl) are a compliment to the chef! Since it disappeared within minutes, I'd have to say it was also approved by the people.
