- 1 bunch kale (lacinato/dinasour, – Feel free to use less, if you don’t want a bunch of kale in your potatoes)
- 1/3 cup extra-virgin olive oil (or more as needed)
- 1 tsp. extra-virgin olive oil
- 3 garlic cloves (minced)
- 1 1/2 cups buttermilk (or whole milk, at room temperature – I actually used 3/4 cup buttermilk and 3/4 cup 1% milk)
- 3/4 cup grated Parmesan (at room temperature – I used 3/4 cup)
- 1 tsp. sea salt
- freshly ground pepper
