This was absolutely delicious. Smooth and creamy. I was too lazy to use the potato masher so I gave it a few pulses of my immersion blender on low. I used dill, parsley and basil as my herbs. It's a new family favorite. However, I wouldn't call it a potato substitute. Each dish is its own star.
