- 8 bone-in, skin-on chicken thighs
- 6 cloves garlic (finely chopped)
- 1 onion (diced)
- 2 stalks celery (diced)
- 4 medium carrots (diced)
- 1 green bell pepper (diced)
- 2 medium potatoes (diced)
- 1 packet goya sazon (con culantro y achiote seasoning)
- 2 bay leaves
- 1/2 cup green olives (Spanish, whole or roughly chopped)
- 14 oz. whole peeled tomatoes (canned)
- 14 oz. pink beans
- 2 cups water
- salt (to taste, we added an additional ½ teaspoon)
- 3 cups white rice (uncooked, steamed and thoroughly mixed with ¼ cup of olive oil, 1 teaspoon salt, and ¼ cup chopped parsley)
