- 5 cups idaho potatoes (scrubbed and chopped into small cubes, I like to leave the skins on, however, if you want to peel the potatoes, that will be ok)
- 1 lb. ham (cut into chunks or skinless smoked sausage, I use Eckrich)
- 1 onion (small, diced)
- 4 green onions (sliced)
- 1 bell pepper (red, yellow, green or orange, diced)
- 2 Tbsp. vegetable oil
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 cups milk (whole or 2%)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 12 oz. frozen broccoli florets (optional)
- 2 cups shredded cheddar cheese (sharp or mild, Colby Jack)
- 1/8 tsp. paprika (smoked or regular)
