Came out runny. Tried all the prep tips from other comments; cleaned equipment, separated yolks over separate bowl, checked food coloring for oil base, even took longer to heat egg and sugar mixture to avoid extra moisture from the lower pan. When it wasn’t coming together added cream of tartar, no response. Tried a bit of powder sugar, also no fluff and it resulted in a gritty mouth feel. Had to scrap the batch. Maybe I’m just unlucky.
Edit: If it doesn’t fluff up, don’t add anything but pipe it onto parchment paper like macarons and bake 300•F for about 18 minutes. Not frosting but nothing wasted.

Way too sweet. And not thick enough to use to frost. Consistency of marshmallow fluff slightly heated in the microwave..

This frosting is amazing! I added some cinnamon for a pumpkin cake I made and it was delicious! I will definitely make it again!

Didn’t get as fluffy as a wished. It was the consistency of the marshmallow fluff.

i used a combination of beet sugar, coconut sugar & turbano sugars... BEAUTIFUL & FANTASTIC... used as filling for my triple choclate cake (GF & DF too)
Big HIT! will make definitely make this again.
