- 8 oz. seitan (plain, cut into bite sized pieces)
- 1/4 cup tamari (or low-sodium soy sauce)
- 1/4 cup brown sugar
- 2 cloves garlic (chopped)
- 2 tsp. fresh ginger (chopped, or ¾ teaspoon of ground ginger)
- 1 Tbsp. Dijon mustard
- 2 Tbsp. vegetable broth (for sauteing seitan)
- bread (Vegan, or rolls)
- spicy brown mustard (optional)
- 1/2 white cabbage (or red, cored and cut into ribbons)
- 1/2 red onion (chopped)
- 1 chili (red fresno, or jalapeno, sliced thinly with seeds removed)
- 1/4 cup red wine vinegar (good, or white vinegar)
- 1/8 cup extra-virgin olive oil (or more if too tart for your liking)
- 4 cloves garlic (chopped, use less if you don't like too much garlic)
- 2 Tbsp. fresh lemon juice (1 lemon)
- 2 Tbsp. dried oregano
- 1 tsp. salt
- fresh ground black pepper (to taste)
