- 175 grams unsalted butter (softened)
- 175 grams caster sugar
- 3 eggs (room temperature)
- 1 lime
- 1 pinch salt
- 175 grams self-raising flour
- 40 mL milk
- 4 Tbsp. tequila (optional)
- 150 grams unsalted butter (softened)
- 500 grams icing sugar
- 50 mL tequila
- 2 limes (to decorate)

Directions
- Line a cupcake or muffin tray with liners and pre-heat your oven to 150 degrees Celius (fan oven).
- Cream the butter and sugar together for about 5-10 minutes or until pale and fluffy. Add in the eggs one at a time, whisking each egg throughly. If the mixture starts to split, add in a tablespoon of flour.
- Add the zest and juice of the lime, salt and sift in half the flour. Fold together with a spatula until just combined. Add the milk and fold. Fold in the remaining sifted flour, making sure the mixture is uniform, try not to over mix.
