- 2 eggs (preferably at room temperature)
- 1 cup mashed ripe bananas (packed, about 3 bananas)
- 1/4 cup milk (choice or water, I used almond milk)
- 1 tsp. baking soda
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 1/2 tsp. canela (plus more for sprinkling on top)
- 1 3/4 cups white whole wheat flour (or regular whole wheat flour)
- 1/3 cup old-fashioned oats (plus more for sprinkling on top)
- 1 tsp. turbinado (raw sugar or other granulated sugar, for sprinkling on top)

I have made these three times so far and my kids love them. I never have whole wheat flour so I just use all purpose. I skipped the topping (because I forgot) and it's still good. For me, this recipe makes 12 standard sized muffins and there's still some left over batter for 8 mini muffins.

These muffins are awesome! I prefer this to banana bread any time! Used one very large egg, coconut milk and 4 small overripe bananas. Also added 1 1/2 tsp chai spice, 1/4 cup toasted coconut flakes and 1/3 cup mini chocolate chips. The muffins turned out moist and fluffy. This recipe is a keeper!
Next time will use date molasses if I don't have any maple syrup and try with 1/4 cup hemp seeds.
